Oaty Banana & Sultana Fingers

Happy hump day everyone,

What better way to celebrate the weekend approaching than with some yummy food.  My little helpers and I made some delicious Oaty Banana Fingers at the weekend and I had to share the recipe with you. 

I love to bake with my children, as it teaches them some really useful skills & we have great fun (and mess) along the way. This particular recipe was really simple to follow and there were lots of opportunities for Letoya & Ethan to get hands on!

We started by weighing out 225g of Butter and mixed it with 225g of Caster Sugar.  Continue and add 225g of Self-Raising flour, to make a dough.  When you have created a firm mixture, add in 100g of rolled oats.  When you have done this, add in 60g of sultanas and ensure that the the mixture is firm.

Pick 2 over-ripe bananas and mash them into a paste-like form.


 Put the dough mixture into a rectangular baking dish and spread evenly.  Follow this by spreading the mashed banana mixture on top.  I always finish by sprinkling a few more sultanas on for decorative effect.


Bake for 20 minutes at 180 Degrees Celcius.  When finished, slice into fingers and sprinkle with a little Caster Sugar
